From Grandmother's Recipe Box


Old- Time Easy Caramels
  

  • Three cups granulated sugar
  • One-cup white corn syrup
  • One-cup heavy cream
  • One-cup milk
  • Two tablespoons cornstarch
  • Four tablespoons butter
  • One half teaspoon salt
  • One-teaspoon vanilla
  • Two cups meat nuts

 
Thoroughly mix cornstarch and sugar. Add corn syrup, cream, milk, butter and salt. Stir until sugar is melted.

Cook over a low fire until a few drops tried in cold water are as hard when picked up in the fingers, as the caramels should be when finished.

Remove from fire and let cool a few minutes before adding nuts and vanilla.

Turn into a thickly buttered square pan and let stand until cold and hard. Turn out, up side down on a slab and cut with a butcher knife into even squares. Wrap in oiled paper.
